Bake Your Own Bakery-Style Ostehorn med Skinke (Ham and Cheese Horns)

If you have ever visited a Scandinavian bakery, you have likely encountered the irresistible, golden-brown aroma of freshly baked horn—soft, buttery pastries wrapped around savory fillings like ham and melted cheese. Known as ostehorn med skinke in Norwegian and Danish, these handheld treats are the ultimate comfort food.

Whether packed into a school lunchbox, enjoyed as an afternoon snack, or served warm alongside a cozy bowl of soup, these homemade cheese and ham horns are surprisingly easy to make and guaranteed to become a household favorite.

What Makes Them So Special?

Unlike a heavy sandwich, ostehorn feature a yeast-leavened dough that hits the sweet spot between a soft dinner roll and a flaky croissant. As the pastry bakes, the cheese inside melts and fuses with bits of savory ham, while the exterior develops a shiny, golden crust sprinkled with seeds or extra cheese.

Ingredients You’ll Need

To make about 12 to 16 large horns, gather the following ingredients:

For the Dough:

  • All-purpose flour: 500g (approx. 4 cups)
  • Active dry yeast: 1 packet (7g) or 25g fresh yeast
  • Milk: 250ml (lukewarm)
  • Butter: 75g (melted and slightly cooled)
  • Sugar: 1 tablespoon
  • Salt: 1 teaspoon
  • Egg: 1 large (plus an extra egg for brushing the tops)

For the Filling:

  • Ham: 200g (diced finely or sliced into thin strips)
  • Cheese: 200g grated cheese (Gouda, Edam, or a sharp cheddar work wonderfully)
  • Herb option: 1 tablespoon of finely chopped fresh chives or parsley (optional)

For the Topping:

  • Sesame seeds, poppy seeds, or extra grated cheese for sprinkling

Step-by-Step Instructions

1. Prepare the Dough

  1. In a large bowl, combine the lukewarm milk, sugar, and yeast. Let it sit for 5 to 10 minutes until it becomes frothy.
  2. Add the melted butter, salt, the 1 egg, and about half of the flour. Stir well.
  3. Gradually add the remaining flour, kneading for about 8 to 10 minutes until the dough is smooth, elastic, and slightly tacky, but not sticking to your fingers.
  4. Cover the bowl with a clean kitchen towel and let it rise in a warm spot for 45 to 60 minutes, or until doubled in size.

2. Mix the Filling

While the dough is rising, prepare your filling by combining the diced ham and grated cheese in a bowl. If you like extra flavor, toss in a pinch of dried oregano or fresh herbs.

3. Shape the Horns

  1. Punch down the risen dough and divide it into two equal balls.
  2. Roll one ball out on a lightly floured surface into a large, even circle (about 30 cm or 12 inches across).
  3. Cut the circle into 8 equal triangle wedges (just like slicing a pizza).
  4. Place a small handful of the ham and cheese mixture at the wide base of each triangle.
  5. Roll the dough up tightly starting from the wide end down to the tip. Curve the two ends slightly inward to form a classic crescent “horn” shape.
  6. Repeat the process with the second ball of dough.

4. Second Rise and Bake

  1. Place the shaped horns on baking sheets lined with parchment paper, leaving space between them for expansion. Cover and let them rise for another 20 to 30 minutes.
  2. Preheat your oven to 200°C (400°F).
  3. Beat the remaining egg and gently brush it over the top of each horn to give them a glossy finish. Sprinkle with sesame seeds or a little extra cheese if desired.
  4. Bake for 12 to 15 minutes, or until the horns are puffed up and golden brown.

Serving Suggestions

  • Enjoy them warm: Let them cool for just 5 minutes so the cheese sets slightly, then bite in while they are still warm and gooey.
  • On the go: They freeze and reheat wonderfully. Just pop a frozen horn in the toaster oven or microwave for a quick, hot breakfast or snack.

Tip: Pair your freshly baked ostehorn with a crisp green salad or a warm tomato soup for a satisfying, comforting meal any day of the week!
